Wood-fire bilona ghee

Thirty litres of milk. One kilogram.

From our own Gir herd in Gandhinagar — the same cows whose names are on the milk bottles. Cultured overnight, hand-churned, finished over wood. Shipped anywhere in India.

  • 01

    Cultured, not creamed

The whole milk is set to curd overnight. Most “bilona” ghee starts from cream, which is a different thing and a cheaper one.

  • 02

    Hand-churned

The curd is churned to butter, not centrifuged. It takes about forty minutes.

  • 03

    Wood fire

Simmered slowly over wood until the grain forms. Too hot and you get colour without flavour.

  • 04

    30 litres to the kilo

That ratio is the whole cost of it, and the reason the price is what it is.

Jar

No payment now. We call to confirm the batch and take payment — every jar is churned to order, so we would rather speak to you first.
